Hummus
6 to 10 cloves of fresh garlic - peeled (garlic quantity depends on personal taste - use more or less if you want)
3 cans Garbanzo Beans - drained
1/4 to 1/2 cup of roasted sesame tahini (again, quantity depends on personal taste)
3 tbsp lemon juice (you can use a tbsp of rice vinegar - i haven't used regular yet - if you don't have lemon juice)
1/2 cup extra virgin olive oil (rough estimate - you may need more or less)
salt to taste
throw the garlic into a food processor or blender, chop fine, drizzle in a little olive oil, throw in some tahini and the lemon juice - blend it all together, add a can of garbanzo beans, blend, add more olive oil if too stiff, blend again, add the next can of beans, more olive oil, if necessary, the last can of beans, more oil, if necessary.
Taste it - if you feel it needs salt - add a little
DON:T go hog wild when adding the olive oil. - just do a little at a time - you want to keep the consistency on the thick side.
This is best if you make it a day ahead so that all the flavors can meld together.
This makes one party-recipe.
